Wonders of Nature, The Grapefruit Tree Has Been Born

I don't know how many times I have to emphasize about nature being amazing. What you see in the picture is a grapefruit seed that is about to turn into a grapefruit tree. Okay I am exaggerating a bit. On the other hand let me tell you a story what happened to this seed that is about to see the world. During citrus season we are very vivid eaters of grapefruit, oranges and lemons. However, by the end of the season new fruit comes around, and we say good bye to the grapefruit. Well, we had extra and they were just left on the counter in the basket for few weeks. Today I saw some nice fresh grapefruits in the store, but I thought we should eat the one we have, so tonight is the night. While eating fruit my husband found this seed that sprouted inside the grapefruit, and then I found one too as we carried conversation about this seed. Let me then share with you what we have observed. The fruit itself is the best nutrient for the seed. The seed was able to germinate inside the grapefruit. The leafs sprouting are green, so this indicates that the sunlight was able to penetrate through the grapefruits skin. On the other end of the seed strong root over an inch long was curving out which is used to feed all the nutrients to the germinating seed. So this is how the grapefruit 'tree' has been born, and we have witnessed or more so almost ate it. And to conclude you must know now that the fresh fruit and vegetables we eat all the time are all alive. Hope you had fun reading my observations, and it was fun discovery night for me too. Lastly before I go, Matthew is sending hugs and kisses to all of you and is thanking for beautiful wishes he had received for his first birthday. Unfortunately, he has been sick again with flu; but is recovering very well. As all of you already know Matthew just turned one couple of weeks ago and started to walk by himself on Mother's Day. Is able to turn the computer on and leads to the chair so he can sit and type like daddy does or mommy too. No problem with operating a mouse. And today as I put his change of clothes in front of him, when I came back to dress him - the t-shirt was on top of his head. It was a very cute scene. He knows the routine, I guess he attempted to do it himself. Everyday Matthew does little things of which I make notes. It is so amazing to observe my little miracle of life every day and many many days to come. A Bit of Knowledge: A Picture is Worth a Thousand Words

Oh my I didn't even realize that its been a while since my last post. I tell you time just passes by - and Matthew will be one year old on May 7th. We already celebrated first round of his birthday last weekend with my husband's family, and this coming weekend it will be my side of the family. We had to split, otherwise, everyone would just feel like a sardine during the party due to space constraints, and I want to cook it all myself, and bake it myself. Speaking of making stuff - when Matthew was born, I said I will do stuff for him myself, cook, bake, take care of him 24/7, meaning I am not going back to work until he is ready for school or when he has enough of me, lol. As the title states, a picture is worth a thousand words, I want tell you some other uses of the digital camera rather than art. I always been a big fan of recording information, or more so recording events in my life - things I did, places I travelled, things I cooked, things I baked, things I made myself. The neat thing about the camera is that I don't have to write things down anymore that much and wow it has a time stamp, which often I do forget to update sometimes. However, let me give you few examples. When I hiked last year, I would take photo of the starting point, then mid point and the end. Of course I would take my nice photos between. When I cook, I take photos of my prepared dishes. When I bake I take photos of my cakes and cookies. When I host party I take photos of vegetable or fruit arrangements, and yes I don't forget to take photos of the guests too, lol. Another thing I did was I photographed five plastic containers of stuff I have - my treasures collected over the years. Since sometimes I like to dig some stuff out I have to go through all the containers because for life of me I just don't remember where is what. So what I did, I photograph all my articles, and index them by container. Now I don't have to look inside, I just look into folders on my computer and find what I need to look at again, like I really really do.

In this post I have few examples of what I prepared for Matthew's birthday last weekend. I made him mouse cheesecake [above]. It may not look great, because I still need practice in the field of cake decoration, but it did sure tasted great. Very light, mango flavoured with a layer of chocolate cake. Unfortunately the chocolate cake supposed to be 3 layer cake, but because I didn't beat it well, I ended up with 1/2 inch one hard big cookie. This reminded me the 7-layer cake flat as a pancake baked by Fred in the I Love Lucy episode.
The other two photos are showing my fruit arrangements - one with strawberries and the other with cantaloupe balls, and unfortunately again I do need practice with making melon balls. I was very disappointed when I was getting 1/2 balls only. If you wondering what the green leafs are - its kale. It is excellent leaf for decorating fruit arrangements.My last comment is that taking photos with digital camera is almost free. I remember I used to do the same with film camera, it was pain because it cost me money for something useless I guess, and it was pain when the photos for some reason didn't come out. Boy am I ever happy now!
